Now the fruit has set, the vineyard is giving us a hint of the size of this year's harvest, but there's lots to do yet. Be there as the young grapes slowly ripen as they hang on the vines. You'll learn how to manage the canopy; thinning out the leaves to expose the delicate fruit to the sunshine. This will help maximise the final sugar levels, crucial to wine production.

During an enjoyable morning we teach you canopy care, the vital process of managing the vineyard as the grapes ripen. We need to have just the right level of leaf foliage; too much takes energy away from the fruit, too little and there's not enough. These grapes will be made into English wine, so we need a steady ripening, with well balanced sugars and acidity. Come and see how it's done and join in yourself. spend a summer morning in the Kent vineyard.

Your sumptuous two-course lunch with a glass of Rampant Horse* is served at Sissinghurst's award-winning village pub, The Milk House.
